Collazzone is a small hamlet a few kilometres from the town of Todi. Today it has a population of over 3000 inhabitants, thanks to the process of urbanisation which the town underwent at the beginning of the 1900's. Its origins go back to the Roman age, evidence of which can be seen at the archaeological area Le Carceri, close to the hamlet.
The culture of the olive is very important here, and the typical dishes are based on simple and genuine ingredients. The land around the town is made up of hills and valleys covered in woods. The largest attractions are the Castle of Collazzone, of medieval origin, dating back to the VIII-IX centuries and the convent of St. Lorenzo, in the past, a Benedictine abbey.
